PS:1 Club-Mate is our home brew version of a Yerba Mate flavored soda, as popularized by the german brand Club-Mate. It was first brewed at PS:1 in February 2019 by Joe Mertz.
Recipe
For 5 gallon batch:
Ingredients:
- Yerba Mate Tea - 3.5 Cups
- Brown Sugar - TBD (See Brewing Logs)
- Water - 5 Gallons
Steps:
- Bring 2.5 Gallons of Water to a boil
- Brew tea, steep for 7 minutes
- Add sugar to sterilized keg
- Strain tea into keg
- Add remaining water to fill keg
- Pressurize keg to 30-50 PSI and rock back and forth to force carbonate
- Let settle. Return pressure to 2-5 PSI to serve
